About text: double-click a line to change it. The editor keeps the PDF's own font when it has every letter you type; fonts in PDFs are usually cut down to just the letters used, so a new letter switches the line to Helvetica, Times or Courier, whichever is closest, and says so. Any text can also be set in any of about 2,100 open-source fonts (all of Google Fonts, and more), with weight, line height, letter spacing, alignment, case and more; those fonts are fetched when chosen and embedded in the download, cut down to the letters used. Lines of the PDF's own text are edited one at a time, and text after an edit on the same line moves along with it, but a paragraph doesn't re-wrap.

About saving: only the pages you change are rewritten. Everything else in the file, including pages you didn't touch, form fields and links, is carried over unchanged. Deleted text and images are removed from the file, not just hidden. A digital signature won't survive any edit, since that's what it's for.
